Hunger Strikes Again

Starting off by apologizing for not writing in a few months! I have started a new job and have been focusing a lot on growing my Instagram account. I now have 3K followers, YAY!! Although none of this is an excuse, that’s why I’ve been so MIA. Now I came back with lots of fresh new content to write about!

Being the foodie that I am, I have been visiting lots of new hip places and cooking up multiple storms in my kitchen! I will review the places that I have been to in my next post. I have not had too much time for cooking lately, but started that habit up again the last few weeks. There is something so relaxing about cooking up new things and trying out new recipes!

Speaking of new recipes, today was my day off of work and I decided to cook a real meal for breakfast today. Unlike my usual cup of iced coffee from Starbucks along with two hardboiled eggs that I shove in my mouth on my way to work, this meal was much more rewarding! I made coconut oatmeal pudding based off of @rrayyme’s recipe on her Instagram account.

This is how it all went down: Last night I soaked oatmeal, shredded coconut, and chia in water overnight. This morning I poured the concoction in a small pot and added a cup of milk and began boiling! 12 minutes later, my yummy pudding was ready!

Here is the recipe:

  • 1/2 cup of rolled oats
  • 3 tbsp of shredded coconut
  • 1.25 cups of water
  • 1/2 tbsp of chia

Soak those 4 items overnight and the next morning add to a small pot with 1 cup of milk and let the mixture boil. Once it boils, lower the heat and let it simmer for 12 minutes covered.
